How to make Toffee Apples

They may not be good for your teeth, but toffee apples are oh so scrumptious! Stick that sweet autumn apple onto a sturdy wooden stick for easy holding and biting. This recipe makes 10 toffee apples.

Ingredients

• 10 small to medium apples, washed and dried (red or green is fine as the colouring will cover up the colour)
• 4 cups (1 kg) sugar (preferably brown)
• 250 gms butter
• 4 tbs white wine vinegar
• 4 tbs boiling water
• 1/2 teaspoon red food colouring

Steps

1. Assemble ingredients.
2. 

   
   Mix the sugar, butter, vinegar and boiling water. Make sure that you are using a saucepan that has a heavy base to prevent sticking.
3. Add the food colouring.
4. Cook over a low heat.
5. Stir continuously until the sugar has all dissolved.
6. Once the sugar has dissolved, boil the mixture for 10 minutes or until the mixture reaches a 'hard crack' stage. Do not stir! If you have a candy thermometer, the temperature should read 150ºC.
7. 

   
   Test the toffee. Drop a little bit of caramel into a bowl of water. If it hardens immediately, it's ready.
8. Remove from the heat and let the bubbles disappear.
9. 

   
   Pierce the apples through with the wooden skewers. Push it through the top until it gets halfway inside the apple. Check for a firm hold.
10. Tilt the saucepan with the toffee mixture in it. (Use some sort of wedge to free up your hands).

    Dip the apple into the toffee and twist it around gently until the whole apple is coated in toffee.
12. Remove the apple, allowing any excess drips to fall back into the saucepan.
13. To harden the toffee, dip the covered apple immediately into ice cold water (throw in ice cubes if necessary).

    Put the apple down onto a tray covered in baking paper to set.

    Serve and enjoy!

Hot Spot Coffee started as a small, drive-through kiosk in Brentwood, but in its latest incarnation has been transformed into a full-service coffee shop on Highway 96 West in Franklin.
“We wanted to take our time and make this space as amazing as it can be,” owner of Hot Spot Coffee and Franklin resident John Kromm said.
Since they signed a the lease on Jan. 1, John and his wife, Shannon, spent the past few months changing the former location of Kozibean coffee shop into a slice of coffee-flavored heaven, painting walls, adding a drive-thru, and creating a cool, café atmosphere he thinks will be a big hit in Franklin. “There are different types of coffee houses for different kinds of people,” he said. “This is definitely a coffee shop for everyone.”
The key, Kromm said, is location, enticing all demographics, and his secret weapon, Segafredo Zanetti, a rich, mellow line of Italian coffee that will be the staple in all his coffee-based drinks.“They’re a real, Italian coffee company,” he said. “This is what espresso is supposed to taste like. It’s very different than Starbucks.”

Unbelievable Spinach Calzones

INGREDIENTS

                                                                

•                   1 (15 ounce) container ricotta cheese                     
•                   2 eggs               
                    2 tablespoons dried Italian seasoning                                     
                    3 cups shredded mozzarella cheese                                  
                    1 cup freshly grated Parmesan cheese                               
                    1 (10 ounce) package frozen chopped spinach, thawed and squeezed  dry             salt and pepper to taste                            
                   1 (32 ounce) package frozen white bread dough, thawed

                                                                                       

                                DIRECTIONS

                                                                

1. Preheat the oven to 400 degrees F (200 degrees C).
2. In a large bowl, mix together the ricotta cheese, eggs, Italian seasoning, mozzarella cheese, Parmesan cheese and spinach. Set aside.
3. Divide the bread dough into 8 pieces and roll each piece out to about an 8 inch circle. Spoon about 1/2 cup of the ricotta filling onto each circle, fold over and seal the edges. Place onto a greased cookie sheet.
4. Bake for 30 minutes in the preheated oven, or until nicely browned on the tops and bottoms.

Feile Franklin

Mark your calendars for the fourth annual “Féile Franklin” scheduled for March 10, in downtown  Franklin. . This annual Celtic Festival and Irish Beer Tasting event began four years ago as a way to celebrate St. Patrick’s Day and raise money for the Downtown Franklin Association. Darryl McCreary, event founder, remarked that “Middle Tennessee was founded by Irish and Scotts and there’s a lot of heritage here people don’t know about.” This year the festival falls a week before St. Patrick’s Day but offers “everything and anything Irish and Celtic,” said Corrie Asch, one of the event  coordinators.
